What is the ONE thing holding you back from eating more veggies?

For most of my clients (and tbh, me), it’s the TIME to takes to wash, chop, and prepare veggies. After a long day of work, all I want to do is eat "easy food"-- no washing, no chopping, no cooking.

One way to I get more veggies in during the week is I set aside some time on a weekend day and wash and chop all my veggies for the week. I’ve gotten my veggie prep down to about 15 minutes, not including cooking time (another 20-30 minutes), if I decide I want to cook them. I often leave some veggies raw to get those extra enzymes and nutrients!

The trick to batch cooking is to KEEP. IT. SIMPLE. 

Start with the area that you think you struggle the most in terms on eating more vegetables. Is it breakfast? Lunch? Dinner? Start there. Prep enough veggies to get you 5-6 days worth of that one meal. As you get more comfortable, add another meal’s worth. Small steps lead to big successes.

I like to start with 3-4 different veggies for my meals. I can eat the same thing every day (and sometimes for every meal), but some variety is good. I like to do vegetables that are in season and local, and that can be “dressed-up” to taste differently at each meal. For example, peppers and onions are fantastic in a breakfast omelet, thrown on top of a taco salad, or quickly sauteed with some chicken and tzatziki. I would just wash and chop several peppers (the more colors, the better!) and an onion or two. Or tomatoes, cucumbers, and red onion work well with a lot of different dishes-- add some balsamic and olive oil and oregano, or some chili lime seasoning, or whatever floats your boat.
