5-ish minute chicken soup

FALL IS HERE, PEOPLE!

I love everything about fall-- the weather, the flavor of harvest, the colors, the soups.

Soups are everything-- comfort. warmth. savory. nutrient-dense. How many of us have memories of a warm bowl of homemade soup (usually by grandma) on a chilly day, or when you were sick, or just because? Soups always elicit those memories for me. And it's finally cool enough to bust out my soup pots again! 

As much as I love soup, I don't always have all day to simmer a batch of homemade comfort. And we won't settle for the canned business. Ew. 

I love this recipe because it embodies all that I love about soup, and it takes 5ish minutes to make. I keep "pucks" of frozen bone broth in my freezer for quick broths, but store-bought is fine (I love me a Barefoot Contessa reference!). To make the pucks, I make a batch of bone broth in the instant pot, and then freezer it in a silicone muffin tray. Each cup holds about 1/2 c of broth. I think. 

Anywho, most of the time is spent in the prepping of the ingredients, but I usually do this while the broth pucks are melting and heating up.

This soup can be tailored to your specific tastes and on-hand ingredients. Don't like curry? Skip it. Don't have coconut cream or coconut milk? Use regular cream if you can tolerate it. 

5ish-Minute Soup (adapted from FitMenCook):

  • 4 cups broth (I like beef, but you could use whatever)

  • 1 can coconut milk/cream

  • 1-2 T red curry paste (you can use whatever flavor you like)

  • 1 rotisserie chicken, shredded

  • Carrots, shredded or matchstick sliced

  • Zucchini, thinly sliced

  • Purple cabbage, shredded

  • ​Broccolini

  • Sprouts

Optional

  • Basil

  • Jalapeno 

  • Noodles (I used brown rice noodles here)


Directions:

  1. Shred chicken.

  2. Wash and chop veggies.

(if including noodles, cook according to package)

  1. Add broth to pot and bring to boil.

  2. Add coconut milk/cream and curry paste

  3. Assemble chicken and veggies in a bowl, whatever amounts you’d like (I like A TON).

  4. When broth is desired eating temperature, pour over the veggies and top with basil, jalapeño, or whatever you'd like!
